World According to Cheese classes cover cheese history and science, regional distinctions and pairings principles. You can either attend one of my regular SideTour events or schedule your own private class by contacting me directly. Classes can be customized to suit your interests, dietary restrictions and event themes. I welcome all questions and requests!

Package 1: Standard Cheese Class (featured on SideTour)

Cheese: Six cheeses that represent 6 different cheese styles: Fresh, Bloomy Rind, Washed Rind, Alpine Style, Surchoix, Blue.

Wine: Sparkling white wine, red wine.

Class: Brief history and science of cheese, highlighting the differences between milk types, mold types, and cheesemaking processes. Guided tasting including food and wine pairing principles.

Package 2: Standard Wine and Cheese Class

Cheese: Six cheeses corresponding to winemaking regions: France, Italy, Spain, South America, USA

Wine: Six wines representing different grapes types/regions.

Class: Brief history and science of cheese, brief history of wine making and regions, highlighting pairings guidelines. Guided tasting including wine and cheese pairing priciples, as well as food pairing suggestions.
